That contrast between the bitter, caramelized top and the sweet, custardy interior is what makes this dessert addictive.

The Basque burnt cheesecake went viral because it is practically impossible to ruin. Overbake it slightly and you just get more caramelization, which is not a problem. Underbake it slightly and you get a creamier center, which is also not a problem. Make it the next time you need a dessert for a dinner party. Use two pounds of good cream cheese at room temperature, a cup and a quarter of sugar, six eggs, two cups of heavy cream, and a tablespoon of flour. Blend it smooth.
