How to Throw a Backyard BBQ That People Remember

A memorable backyard BBQ has almost nothing to do with the grill and everything to do with the setup. Anyone can cook burgers. The difference between a forgettable cookout and one people talk about for months is preparation, variety, and creating a space people do not want to leave. Think of it as hosting a party that happens to have fire and meat, not the other way around.

The meat lineup needs range. Have your crowd-pleaser burgers and dogs, but add at least one thing that surprises people. A whole spatchcocked chicken rubbed with a blend from Burlap and Barrel, grilled indirect for about an hour, is a showstopper. Tri-tip, seasoned simply with salt, pepper, and garlic, grilled hot and sliced thin, is the best-kept secret of California barbecue and costs about eight dollars a pound.

Sides make or break the spread. Coleslaw, potato salad, and corn on the cob are the core. Elevate the corn by grilling it in the husk, then slathering with mayo, cotija cheese, chili powder, and lime for elote-style street corn. A big bowl of watermelon chunks with Tajin and lime is the simplest crowd-pleaser possible. Make a quick pickled onion with red onion, rice vinegar, and sugar to top everything.

Set up a self-serve drink station. A galvanized tub filled with ice, beer, seltzers, and canned cocktails eliminates the need to play bartender all day. A batch cocktail in a drink dispenser, like a tequila-based Paloma punch, adds a level of polish that impresses without requiring effort once it is made.

Music, lighting, and seating matter as much as food. A Bluetooth speaker with a playlist that ranges from Khruangbin to Stevie Wonder sets the tone without dominating conversation. String lights turn any backyard into a venue after sunset. And make sure there are enough chairs and surfaces for people to sit and eat comfortably. Standing with a plate of ribs is nobody's idea of a good time.
